Question: Camping food – any ideas for my trip please?
Hi
We are going on a camping trip in may – have you any ideas for evening meals?
We are going for 5 nights and stopping at a different campsite each night (driving – so it doesn’t need to be light) and staying in small tent
We have an electric cool box in the back of the van so we can keep stuff fresh.
We have a 1 ring gas stove

You can almost take anything you like at home and make it into a camp meal.

before having kids I would take bacon, pot noodles, cup a soups, loaf of bread and what ever fish I caught for dinner.
Now I take Pasta with tins of soup to use as a quick and easy cook sauce with smoked sausages and veg to chop up and put through it, since they are ok out of the fridge for a few days.
Since you have a cool box in the car you can take fresh meat, take with you plenty of water and make stews or casseroles a few nights and take packets of mash potatoes to save some trouble.
Quite a lot of campsites offer good facilities including a restaurant or cafe, so you might want to try a couple of nights out rather than cooking for yourself.
if you take plenty of veg and meat take a bag of lentils and make a pot of soup for yourselves. I think as long as you have pasta, veg and meat you can do a variety of things, from pasta dishes to soups and stews. If you are getting fishing in as well then that can always cover a few other meals.

I always liked meals I could prepare ahead of time and just heat up like chili, Pasta, stew (either canned dennison or home made). The one special meal steak with baked potatoes and of course a great wine( use the site BBQ if you don’t have one and of course no camping trip is complete with out a Burger meal Hope that helps
The reason I liked precooked was to save time
Depending on the number of people in your party get a couple cans of Campbell’s Chunky Soup. (Any flavor you prefer) Get some pasta and more meat. Cook pasta. Brown meat and add to soup. Pour over pasta with a salad side. Good food and easy.
I have always found that I’d rather enjoy the outdoors rather than fuss over a time consuming meal. Cooking outdoors is also a bit less convenient that doing it in your own kitchen. More importantly, things always taste better outdoors. You did not mention what area you live so do not know whether in May the weather will be warm or cool in the evening. What might be great menus for me might leave you unimpressed. Out tastes may be pretty different. For me, I always try to make it a pretty much a 1-pot or 1-pan dinner rather than having a soup, main course and side dishes. With a 1 ring burner, the 1 pot dish is ideal.
You can pretty much “cheat” with some of the pre-prepared dishes out there available in the store. If you take a bit can of chili, you could brown sausages, bell peppers, onions and anything else you may like, heat the chili up and serve it with plenty of cheese and crackers. You can do the same with several bottles of great spaghetti sauce. I especially like taking something like Zararain’s Jambalaya Rice Mix and adding grilled sausages or canned shrimp or chicken, onions, bell peppers and also a can of tomatoes and turning it into an awesome meal with a side salad. (See the side of many packages for recipe suggestions.). The Lipton foil envelope rice or noodle mixes with other things added can be made delicious. Even taking several cans of Dinty Moore canned stew and adding lots of sauteed mushrooms and extra vegetables can be a good choice. As for dessert, packaged cookies, easy to make package pudding or flan or fresh fruit is always welcomed. Walk around your grocery store and see what might work for you.
